*Your recipe needn’t be for chilled soup; I’m just very fond of them!
Fabulous giveaway! My favorite summer recipe is a light cabbage salad (yummy alternative to cole slaw). It includes cranberries and almonds too. Simply delicious.

We love pasta salads at our house and often change up the ingredients depending on what we find at the Farmers Markets around RVA! Here’s one I published in June 2010:

Peach Blueberry Crumble – peel 6 peaches (Saunders Brothers this week) and slice into 6 – 8 slices, removing the pit. Mix with 2 cups blueberries (Swift Creek Berry Farm). Toss with 3/4 cup sugar, 2 Tbls instant tapioca or 4 Tbls flour, zest of 1 lemon, 2 Tbls. lemon juice. Top with 1 1/2 cups Atomic Bakery Apple Pie Granola. Bake at 350 in the lower 1/3 of the oven for about 40 minutes. It was delicious with a dab of Old Church Creamery yogurt, but vanilla ice cream would be great, too.
